Recipe for a delicious homemade shawarma with pork, hummus, spinach and sweet peppers. Meat for shawarma is prepared in a special way - it languishes in the oven.

  1. Preheat the oven to 160 degrees. Trim fat from meat.
  2. Combine garlic, coriander, cumin, oregano, onion, salt, cayenne and black pepper. Sprinkle the meat with the mixture, rub the spices thoroughly.
  3. In a large cast-iron saucepan with thick walls (cauldron) over medium heat, heat the oil. Fry the meat on all sides until golden brown.
  4. Pour the broth into the meat, bring to a boil, cover the pan with a lid. Rearrange the pan in the oven, cook for 3-3.5 hours. The meat should become very soft.
  5. After that, remove the meat from the pan, save the broth. Using two forks, disassemble the meat into fibers.
  6. Remove fat from broth. Add a little broth to the meat to make it juicier.
  7. We need 2 cups of meat prepared in this way. The rest of the meat can be frozen in portions and stored for up to 3 months.
  8. Chop cilantro. Cut spinach. Pepper cut into strips.
  9. In a bowl, mix hummus, cilantro, 1 tbsp. a spoonful of lime juice, 0.5 teaspoon of chili powder and hot red pepper.
  10. Heat oil in a large skillet over medium heat. Add the prepared meat, remaining chili powder, oregano and salt. Cook, stirring, 2-3 minutes. Remove from heat, add remaining lime juice.
  11. Brush each flatbread (or pita leaf) with hummus. Top with spinach, sweet peppers, meat filling. Roll up into a roll.
  12. Homemade shawarma with pork and hummus is ready. Bon appetit!
