Almond roll with raspberry filling

Air biscuit roll is very easy to make at home. The raspberry jam filling is great for this roll.

Ingredients

Directions

  1. Turn on the oven to preheat to 180 degrees.
  2. Pour sugar into the bowl of a blender or food processor and add almond paste, grind until smooth. Set aside.
  3. Grease a rectangular baking sheet measuring 25x37 cm with vegetable oil, cover with parchment, grease again with oil and sprinkle with 2 teaspoons of flour. Set aside.
  4. In a small bowl mix flour with baking powder and salt.
  5. Pour the eggs into a large bowl, beat with a mixer at maximum speed for 4 minutes. Then gradually add sugar and vanilla, beat at medium speed for about 3 minutes. In this mass, add half the flour, gently mix with a spatula, then add the remaining flour, mix again.
  6. Place the dough on the prepared baking sheet, smooth the surface with the blade of a knife. Place in a preheated oven, bake the cake for about 10 minutes, until a clean wooden stick when pierced.
  7. Sprinkle a clean waffle towel with 2 tbsp. spoons of powdered sugar and put the cake on it. Remove parchment. Sprinkle the cake top with 2 tbsp. spoons of powdered sugar. Let the crust cool for about 1 minute.
  8. Starting at the wide end, roll up the cake along with the towel. Put the almond roll on the wire rack, leave for 1 hour.
  9. Carefully unroll the roll, remove the towel from the cake. Brush the cake with jam, leaving about 1 cm empty from each edge. Roll the cake up again, put the almond roll with a seam on a dish.
  10. Pour the cream into a bowl and pour ¼ cup of powdered sugar, beat with a mixer at medium speed until stiff.
  11. Cut the almond roll into 8 pieces and serve on portioned plates, garnished with whipped cream and raspberries (optional).
