A light soup that cooks in just 25 minutes. This is just the case when you have absolutely no time to cook dinner. If this vegetable soup with white beans is cooked in meat broth, the dish will be more satisfying. Bon Appetit!

  1. Wash, peel and dice the onions, garlic, carrots and zucchini. Heat 2 tbsp in a skillet. tablespoons of vegetable oil and sauté vegetables in it for 3 minutes. Add chopped tomatoes and simmer a little.
  2. Pour in broth and bring to a boil. Dip the tomatoes in boiling water for 30 seconds, pour over with cold water and peel them off. After removing the seeds, chop and put in the soup. Cook for 10 minutes.
  3. Beans, drain liquid, add to soup and reheat. Chop the parsley and stir in. Pour the soup into bowls and sprinkle with cheese.
