Delicious, tender and fragrant chocolate-orange cake.
Ingredients
Directions
Wash the orange well with a brush. Boil in water after boiling for 5 minutes.
Allow to cool slightly, cut, remove the bones and twist in a meat grinder.
Separate the whites from the yolks. Beat the yolks with sugar, gradually adding flour with baking powder. Then add twisted orange to this mass. Mix everything well
Beat egg whites with lemon juice until stiff peaks. Add to dough and mix gently. Cover the detachable form with parchment (I have 24 cm), grease with 1 tsp. vegetable oil and lay out the dough. Bake at a temperature of 180 degrees for 30-40 minutes, until a dry match.
Cool the finished biscuit and cut in half. Lay one half in a detachable form.
Let's get orange mousse. To do this, soak the gelatin in water. Rub the cottage cheese through a sieve, add the zest of one orange and 50 g of powdered sugar to it. Mix everything well.
Whip the cream with the remaining powdered sugar until stiff peaks form.
Now add a little cream to the cottage cheese with zest and beat everything together. Next, add the dissolved and cooled gelatin gradually, and beat again.
From drawing paper, I made a smaller ring, put it on a biscuit and poured orange mousse. Then carefully transfer our design to the freezer for 30 minutes.
Let's get to the chocolate mousse. We wipe the cottage cheese through a sieve, add 50 g of powdered sugar. Whip the cream with the remaining powder and add cocoa at the end. We mix the cottage cheese and cream gradually, and add the dissolved and cooled gelatin in a thin stream.
We take out the orange mousse from the freezer, remove the paper ring. (Before you remove the ring, you need to walk along the walls of the ring inside with the back of the knife). Gently spoon in the chocolate mousse. And again we send everything to the freezer for 30 minutes.
There was more orange mousse, I decided to cut off the protruding part.
For the glaze, heat the cream until hot, but do not boil. Add the chopped chocolate to them and stir well until the chocolate has melted. Pour the cake with the resulting icing
You can decorate the chocolate orange cake however you like. I had caramelized oranges.
