In the summer, you often don't want to mess around with complicated pies for a long time, so a recipe for a simple but very tasty dessert will always come in handy. Its formula is simple - shortcrust pastry and lots of juicy cherries.

  1. Place flour, cocoa, sugar, salt and diced cold butter in a food processor bowl and grind into fine crumbs. Add 2 tbsp. l. milk and turn on the combine in the "pulse" mode for 2-3 sec. Remove the dough and shape into a disc. Wrap tightly in plastic and refrigerate for at least 1 hour.
  2. Preheat oven to 190 ° C. Line a baking sheet with parchment.
  3. In a large bowl, combine cherries, sugar, and cornstarch.
  4. Roll out the dough into a 4–5 mm thick circle and transfer to a baking sheet. Chop the chocolate finely and sprinkle on the dough, leaving 5 cm free from the edge. Place the cherry filling over the chocolate. Fold the free edge over the cherry, press it lightly.
  5. Brush the edges with lightly beaten egg white and sprinkle with brown sugar. Cut the butter into small pieces and spread over the cherries.
  6. Bake the biscuit for 25-30 minutes. Cool for 15 minutes, then cut and serve the biscuit warm with a scoop of ice cream.
