  2. Grind the yolks with half the sugar and white vanilla. Beat the whites without sugar until hot peaks, then add sugar and beat again.
  3. Add half the flour and a third of the proteins to the yolks, mix gently with a spoon, lifting the mass from the bottom. Add the remaining flour and proteins, mix thoroughly and carefully until smooth.
  4. Pour the dough into a baking dish. You can lay out the bottom with parchment, I didn't need to do this, because silicone mold.
  5. Apples are usually added to the bottom of the mold, but I decided to give the charlotte a slightly different look, so I add the apples to the dough, slightly drowning them with a spoon.
  6. We put the future charlotte in the oven (preheated to 190 ° C) for 10 minutes, then lower the temperature to 160 ° C and bake it for another 25-30 minutes.
  7. I decided this time to approach the historical roots of charlotte and add a light custard to it. To do this (preferably in a bowl with a thick bottom), grind the egg with sugar, add flour and 125 ml of milk, knead until smooth. In another bowl, boil the remaining milk, gradually introduce it into the resulting mass, stirring constantly. We put the cream on low heat and boil it down to the required consistency. It took me about 8 minutes for this.
  8. Let us cool the cream, if the dish is not intended for children, you can add a little butter liqueur - it will add a subtle creamy touch to our cream. To do this, add one and a half tablespoons of liquor to the cooled cream and stir, you can use a mixer. Cover the charlotte with cream at random. Sprinkle lightly with cinnamon on top to taste.
  9. The classic charlotte is ready! Cooking took me no more than 50 minutes. You can immediately serve it to the table. Enjoy your meal!
