Cold strawberry soup

Add some hot cayenne pepper, aromatic cilantro and ginger to the juicy berries, and you get an original dish with a rich taste and bright spicy notes.

  1. Peel and cut onions into thin half rings. Chop the peeled apple into small cubes. Peel and grate the ginger.
  2. Heat olive oil in a saucepan. Fry the onion until soft over low heat for 5-6 minutes.
  3. Add apples, ginger, cinnamon, salt and pepper. Cook for 10-12 minutes, stirring occasionally, until the fruit is tender.
  4. Peel the strawberries from the stalks. Finely chop the mint and cilantro leaves.
  5. Combine strawberries, herbs and onions with apples, grind everything with a blender into a homogeneous mass.
  6. Add cold water, stir and refrigerate for 2-3 hours.
  7. Add yogurt or sour cream to the soup and sprinkle with almond petals before serving.
