Croatian Raspberry Pie

Just a wonderful cake, in the summer I baked it all the time during the berry season, children and households ate it for breakfast and did not bother anyone. I highly recommend trying it! The thinnest filo dough and a lot of raspberries. This recipe was shared with me by my friend Nadya Zyabrikova, for which many thanks to her! With her permission, I submit this recipe to the competition.

  1. We will prepare the necessary products. Since filo dough requires quick work with it, you need everything to be at hand. Sort out raspberries, if necessary, rinse under running water and dry.
  2. Preparing a cream for greasing the leaves of the filo dough. To do this, combine eggs and sugar in a bowl and beat, not too zealous. Add sour cream, gradually adding vegetable oil, beat for three minutes all together. Add semolina and mix well again.
  3. We turn on the oven to heat up to 200 degrees and start forming the cake. We take 1 sheet of filo dough and apply our cream on it, about 2-3 tbsp. l. and spread it evenly all over the sheet. We put another 4-5 sheets on top one by one and also coat each sheet. Now put half a sheet of filo dough on top of one half. We do not grease this sheet with anything, we spread half of the raspberries on top along the future roll. Here I will make a small explanation, I got two rolls and I divided the berries in half.
  4. We fold our blank into a roll, preventing the berries from scattering.
  5. Put paper in a baking dish, grease it lightly with butter and put our rolls in it. Cut each roll into pieces about 4-5 cm wide. Pour all this with the remaining cream and place in a preheated oven for 30-40 minutes. Be guided by your oven. Let the cake cool down a little, sprinkle with powdered sugar (optional) and give it to the household to be torn apart, since the aroma is breathtaking.
