Banoffee pie is an English pie with bananas, cream and boiled condensed milk. The basis for banoffee is made from shortcrust pastry. This is a very tasty English dessert that everyone should try!

  1. First you need to make a base of shortcrust pastry. To do this, mix the sifted flour, butter and one egg. Stir, and then beat at low speed with a mixer.
  2. Then add 1 yolk and 1 tbsp. powdered sugar. Whisk again.
  3. Then knead the shortbread dough for 3-4 minutes. Then wrap the dough in cling film and refrigerate for 30 minutes.
  4. Then roll out the dough to the size of your mold.
  5. Place the dough into a mold with sides.
  6. Place parchment paper on top and bake the shortcrust pie base in the oven at 180 degrees for 15 minutes.
  7. In the meantime, make cream. Beat the pastry cream with a mixer until fluffy, add 1 tbsp. powdered sugar, 1 tsp instant coffee and whisk again.
  8. Remove parchment and bake for another 5 minutes until golden brown.
  9. After the shortbread dough has cooled down, fill it with boiled condensed milk.
  10. Lay bananas on top.
  11. Then top with whipped cream and use a pastry bag to decorate the banoffee with buttercream.
  12. Sprinkle the Banana Buttercream Pie with freshly ground coffee.
