Filo dough pies with potatoes and spinach

Charming triangles are made from the thinnest filo dough with a universal filling - mashed potatoes with spinach! The pies turn out to be large and satisfying, and an interesting combination of crispy dough and delicate filling will pleasantly surprise and delight!

Ingredients

  1. Wash the potatoes, peel and cut into medium-sized cubes. Then put the potatoes in a saucepan and cover with boiling water. Add half a teaspoon of salt. Bring the water to a boil and cook the potatoes over low heat until cooked through (about 15 minutes). Pour the broth into a separate container. Crush hot potatoes in mashed potatoes, adding broth as needed so that the mashed potatoes are not too dry.
  2. Peel the onion and cut into small cubes.
  3. Rinse the spinach thoroughly with plenty of water. Remove all stems. Finely chop the spinach leaves.
  4. Heat vegetable oil in a skillet and add chopped onion. Stirring, fry for 2-3 minutes over medium heat, until soft and translucent.
  5. Add chopped spinach and sauté everything together for another 5 minutes, until the spinach softens.
  6. Add mashed potatoes, salt, black pepper and some grated nutmeg to the skillet (optional).
  7. Turn on the oven to preheat to 200 degrees.
  8. Put one sheet of filo dough on the table, brush with vegetable oil using a silicone brush, cover with another layer of dough and grease with vegetable oil again. Fold the two-layer dough, oiled, in half lengthwise to form a wide strip.
  9. On one end of the strip, lay out a triangle of 2-2.5 tbsp. tablespoons of the filling, leaving an empty corner of the dough.
  10. Fold up the free corner to cover the filling. Roll the dough, as if rolling the triangle over a strip of dough.
  11. You should get a neat, not too tight triangle.
  12. Put all the pies on a baking sheet lined with parchment paper.
  13. Liberally grease the top of the patties with vegetable oil.
  14. Send the pies to a preheated oven and bake at 190-200 degrees for 20-30 minutes, until browned.
  15. Remove the patties from the oven. It is advisable to grease hot pies with butter - so they will be softer and tastier.
  16. Filo dough patties with potatoes and spinach are ready to serve.
