Break the boiled salmon fillet into small pieces with a fork, removing bones and skin along the way.
Put the fish in a bowl with mashed potatoes, pour in the melted butter and add the mustard, mix well. Add salt and pepper to taste, also add dill and parsley, lemon zest and juice, mix well again.
Divide the mass into 8 portions, form into balls, and then crush to form patties. First, roll each cutlet in flour, then in an egg and finally in bread crumbs.
Heat the sunflower oil in a large skillet, place the fish and potato cutlets and fry until golden brown on each side.
Put the finished cutlets on a paper towel, let the oil drain slightly, and then transfer the fish cakes to serving plates. Serve fish and potato cutlets with herbs and lemon wedges.
