  1. Turn on the oven to preheat to 180 degrees. In a small bowl, mix the crumbled cookies, sugar and 130 grams of melted butter. Lightly grease a round mold with a diameter of about 22 cm with butter. Pour the sand mass into the mold and form a cake with sides with your fingers. Put the mold in a preheated oven and bake the cake for 10-12 minutes. Remove the finished cake from the oven and leave to cool at room temperature.
  2. Put the ice cream into the cooled cake, cover with cling film and put in the freezer for 15 minutes.
  3. Meanwhile, in a large bowl, beat cream cheese and icing sugar until fluffy. Add whipped cream to cheese mixture, mix well. Take 1 1/2 cups from this mass, and leave the rest in a bowl.
  4. Remove the ice cream cake from the freezer and put the cheese mass from the bowl on top. Put the cherries on the creamy mass, retreating about 2 cm from the edge. Put the reserved creamy mass into a culinary bag or syringe and decorate the cake around the edges.
  5. Cover the cake with cling film and place in the freezer for 3-4 hours. Ice cream cake can stand in the chamber for up to 2 months. Drizzle chocolate syrup over ice cream cake before serving.
