Mashed potatoes with baked garlic and herbs

Try this recipe for mashed potatoes with baked garlic and herbs! Baked garlic, parsley, cilantro, green onions and olive oil add a spicy original flavor to regular mashed potatoes.

  1. Preheat the oven to 180 degrees.
  2. Cut off the white parts from the green onions.
  3. Divide the head of garlic in half, no need to peel.
  4. Put the garlic and white parts of the onion on a 20x20 cm piece of foil. Pour onion and garlic with two tablespoons of olive oil.
  5. We form a bag of foil, leaving a small hole on top for steam to escape.
  6. We bake the garlic and onion in the oven at 180 degrees for 25 minutes.
  7. Squeeze the baked garlic cloves from the husk.
  8. Peel the potatoes, cut into small pieces and send them to the pan. Pour water into the pot so that it completely covers the potatoes. Add 2 teaspoons (no slide) salt. Cook the potatoes for about 20-25 minutes, until tender.
  9. While the potatoes are boiling, remove the stems from the parsley and cilantro. Finely chop the parsley and cilantro leaves and the green onion feathers.
  10. Combine chopped greens, baked onions and garlic and the remaining 100 ml of olive oil.
  11. Grind the herbs and garlic with a blender.
  12. Drain the broth from the finished potatoes (you will still need it. Using a crush, knead the mashed potatoes.
  13. Add the green mixture and black ground pepper to the mashed potatoes. Add to taste.
  14. Knead with a crush again. We bring the mashed potatoes to the desired consistency, gradually pouring in the potato broth.
  15. Serve mashed potatoes with baked garlic and hot herbs.
