In summer, you can prepare mashed potatoes with eggplant as a side dish.

  1. Peel the eggplants, cut into cubes.
  2. Cover with water, leave for 20 minutes. Then drain the water.
  3. Peel and chop the potatoes.
  4. Cover with water, bring to a boil, salt, cook for 20 minutes.
  5. Heat vegetable oil in a frying pan. Put the eggplants, fry, stirring occasionally, until golden brown.
  6. Peel and chop the garlic.
  7. Put garlic with eggplant, stir, fry for another 3 minutes.
  8. Drain the potatoes, mash them with butter.
  9. Chop the greens.
  10. Add the eggplant and herbs to the puree. Stir mashed potatoes with eggplant and herbs.
