Meringue cake with jam and whipped cream

Meringue cake with cranberry jam and whipped cream - a delicious and delicate holiday cake for the New Year's table.

Ingredients

Directions

  1. Divide the eggs into whites and yolks. Leave the yolks for another dish.
  2. Pour the egg whites into the mixer bowl and beat, gradually adding 150 g of powdered sugar.
  3. When the mass becomes thick enough, add starch.
  4. Continuing to beat, pour in the lemon juice.
  5. Beat egg whites until stiff peaks. Well whipped proteins do not fall off the beaters of the mixer.
  6. If you turn the bowl of beaten egg whites upside down, the whites will not fall out of it.
  7. Turn on the oven to preheat to 100 degrees.
  8. Line a baking sheet with parchment. On the parchment, draw two circles with a diameter of 18 cm using a simple pencil, using a plate, lid or form of the appropriate size.
  9. Turn the parchment over to the other side. Arrange the beaten egg whites in circles on the parchment paper.
  10. Put the baking sheet in an oven heated to 100 degrees and bake the meringue for 1 hour in convection mode. Then turn off the oven, and leave the meringue inside for another 1 hour.
  11. Combine whipping cream with remaining powdered sugar.
  12. Whip cream with powdered sugar into a thick creamy mass.
  13. Transfer the meringue to a plate.
  14. Apply 2/3 of whipped cream, smooth.
  15. Spread cranberry jam over cream. Spread the jam randomly over the surface of the cream.
  16. Cover with second meringue cake.
  17. Top with remaining whipped cream. Remove the meringue cake from the refrigerator.
  18. Before serving, decorate the festive meringue cake with cranberries and rosemary sprigs.
