Dried protein cakes (meringue) in combination with plums and butter cream form a festive, delicate and very tasty cake.

Ingredients

Directions

  1. Turn on the oven to preheat to 140 degrees. Line two large baking sheets with parchment. On each draw two circles with a diameter of 23 cm.
  2. In a large bowl, beat the egg whites until fluffy stable foam. Gradually add sugar, beat at high speed until stiff peaks. Introduce ground nuts and cinnamon into proteins.
  3. Put the dough on the drawn circles and place in a preheated oven. Dry the cakes for about 1 hour, until crispy.
  4. Remove the meringue cakes from the oven, let cool at room temperature for 10 minutes, then remove from the parchment and let cool completely.
  5. Cut plums into slices.
  6. Prepare the cream for the meringue cake. Whip cream with powdered sugar until stiff. Add sour cream and vanilla, beat well again.
  7. Assemble the meringue cake. Smear the meringue cakes with butter cream and shift the plum slices.
