This exotic dessert is easy to prepare, looks original, tastes very good. Especially with the sweet and sour juice of ripe "passion fruits" of a tropical plant that has several names (edible passion flower, edible passionflower, purple granadilla), and we are more familiar with the "name" passion fruit.

  1. To prepare the dough, mix flour, sugar and a pinch of salt. Add butter and chop together with flour. Add 4 tbsp. l. (80 ml) cold water and knead the dough. Shape the dough into a disk, wrap in plastic wrap and refrigerate for 30 minutes.
  2. Roll out the dough on a floured surface to a thickness of 3 mm. Put in a form (23 cm) with a removable bottom. Press down the dough with your fingers. Pierce with a fork and refrigerate for 30 minutes (remaining dough can be wrapped in cling film and frozen).
  3. Preheat oven to 200 degrees. Line the dough with baking paper and place a weight (or uncooked rice) on top. Bake for 15 minutes. Remove weight and paper. Brush with a little beaten egg. Bake another 10 minutes until golden brown. Cool down.
  4. Reduce oven temperature to 160 degrees. Whisk eggs with sugar. Stir in cream and lime juice. Fill the pie base with the mixture. Place in the oven for 25-30 minutes. Cool for 10 minutes. Carefully remove the cake from the mold and cool completely. Sprinkle with powdered sugar, serve with whipped cream and passion fruit pulp.
