The classic tart-taten is prepared with apples. But this open pie is so popular that many varieties of tart-taten with other fruits and berries have emerged. Jamie makes it with plums and maple syrup and serves it with a scoop of ice cream like strudel.

  1. Preheat oven to 220 ° C. Place a 26 cm non-stick ovenproof pan over medium heat.
  2. Cut the plums in half, remove the seeds and place in the skillet. Pour in 30 ml water and cook for 1 minute. Sprinkle with half the cinnamon and top with maple syrup. Cover with a layer of dough, tuck in around the edges with a wooden spatula, trim off the excess and, if necessary, close the holes.
  3. Bake on the lower shelf of the oven for 16 minutes, until the dough rises and is browned. Put on oven mitts and gently turn the pie onto a larger plate. Serve with a scoop of vanilla ice cream, sprinkled with leftover cinnamon and a drizzle of extra virgin olive oil.
