Each potato salad is delicious in its own way, this option includes bacon and herbs, a delicious and healthy potato salad!

  1. Boil the potatoes in salted water until soft for about 15 minutes. Put the finished potatoes in a colander and let the potatoes cool at room temperature for 5 minutes. Cut the cooled potatoes into thick slices and place in a large bowl.
  2. In the meantime, heat 1 tablespoon of oil in a frying pan, put the bacon in the pan and fry for about 5 minutes. Remove the pan from the stove, transfer the bacon to a plate.
  3. Pour the remaining oil and lemon juice into the pan in which the bacon was fried, mix and pour everything into a bowl with potatoes. Put chopped celery, cucumber and half of the bacon in the same bowl. Mix everything well and leave to cool at room temperature.
  4. In a small bowl combine mustard, mayonnaise, herbs, a little salt and black pepper, beat well with a whisk or fork. Pour this dressing into the potato mixture, stir well.
  5. Serve potato salad with lettuce leaves on serving bowls, sprinkled with bacon, onions and dill.
