Delicious, hearty and juicy potato salad with olives, bell peppers, feta and tomatoes will appeal to those who follow a healthy diet.

Ingredients

  1. Peel potatoes and rinse them in water. Cut in half or quarters. Place in a saucepan.
  2. Cover with hot water and boil for 15 minutes, then abruptly place in ice water for 10-15 minutes.
  3. Cut the tomatoes into slices, after cutting out the core and rinsing them.
  4. Pour in vegetable oil and stir.
  5. Rinse the basil and pick off the leaves from the stems.
  6. Peel the bell peppers from the seeds, rinse in water and cut into squares.
  7. Peel the garlic, rinse and chop finely. You can just compress it.
  8. Drain the vegetable oil from the tomatoes and add the vinegar to it.
  9. Put all the ingredients of the potato salad in a container, add salt and pepper and mix gently.
  10. Place the potato salad with olives in bowls, sprinkle with grated or finely diced cheese. Garnish with fresh herbs and serve.
