Potato salad with onions and mayonnaise

  1. Boil the potatoes in salted water until soft for about 15 minutes.
  2. Meanwhile, finely chop the white part of the onion, grabbing some of the green.
  3. Whisk the olive oil with mustard and vinegar. Drain the potatoes and mix immediately with oil dressing and chopped onions. Set aside to cool.
  4. Add mayonnaise and chives to the cooled potatoes, mix and put the potato salad with onions into a serving plate. Place a bowl of potato salad in the refrigerator until it is completely cooled.
  5. If you take lean mayonnaise for this salad, then such a potato salad with onions can be served on a lean table.
