Potato soup with baked garlic

This dietary soup is made with baked garlic and potatoes.

  1. Turn on the oven to preheat to 190 degrees. Put the head of garlic on a baking sheet, place in the oven for 30 minutes, until soft.
  2. Meanwhile, boil the potatoes in salted water until tender, for about 10 minutes.
  3. Bring the broth to a boil in a separate saucepan. Drain the potatoes and place in a saucepan with broth.
  4. Squeeze the pulp from the baked garlic into a saucepan with soup, leave a couple of whole cloves for serving. Season the soup with salt and pepper, cook potato soup with garlic for about 15 minutes.
  5. Serve the potato soup in portioned bowls, garnished with whole baked garlic cloves and chopped parsley.
