Quite tasty and appetizing salad with minced meat, potatoes, bell peppers and eggs is a great option both for a holiday and for every day. I use ground beef. A little vegetable oil is used for dressing, you can, if desired, fill the salad with sour cream or mayonnaise.

  1. Transfer potatoes and eggs to a saucepan, add water and send to cook. Boil eggs for 10 minutes, potatoes for 20 minutes. Then pour the eggs with cold water and cool. Remove the potatoes from the broth and also cool.
  2. Peel the cooled potatoes, cut into small cubes.
  3. Peel the eggs and also cut into small cubes.
  4. Remove seeds from sweet peppers and remove partitions. Cut the flesh of the pepper into small cubes.
  5. Peel and wash the onion. Chop the onion as small as possible.
  6. Heat 1 tbsp in a skillet. a spoonful of vegetable oil. Put the minced meat in a pan and fry, breaking with a spatula, for 8-10 minutes. Cover the pan with a lid, reduce heat to low and simmer the minced meat for 15-20 minutes. Allow the minced meat to cool slightly.
  7. Combine potatoes, eggs, bell peppers, fried minced meat in a salad bowl. Add salt, ground black pepper to taste and the remaining vegetable oil. Stir the salad.
  8. Arrange the salad with minced meat, potatoes, bell peppers and eggs on plates, garnish with parsley leaves and serve.
