Chicken and mushroom pies are a popular savory baked item. But in the case of Sochi pies, the whole point is not in the filling, but in the dough: it is mixed with yogurt, a fermented milk product that is very popular in the Caucasus.

  1. For the dough, dissolve the salt in 280 ml of warm water, add flour, add all the other ingredients. Knead the dough. Cover the dough with plastic wrap and leave at room temperature for 30 minutes.
  2. For the filling, cook the chicken in boiling salted water, 20 minutes.
  3. Cut champignons, onions and chicken into small cubes. Fry the onions in vegetable oil in a large deep frying pan until transparent, add the mushrooms and fry, stirring occasionally, for another 10 minutes. Add chicken, stir, let it warm up. Pour in the cream, salt and pepper, bring to a boil and remove from heat.
  4. Divide the dough into 200 g pieces. Roll the piece into a flat cake 25–28 cm in diameter. Place a quarter of the filling in the center and spread in an even layer, stepping back 1 cm from the edges. Roll the edges over the filling and brush over the beaten egg.
  5. Bake the pies in an oven preheated to 200 ° C for 15 minutes.
