Squid with potatoes and cilantro pesto

Delicious squid with potatoes are baked in the oven, and delicious pesto sauce is prepared for them. You can, of course, buy pesto at the store. But it's much more fun to make your own sauce using a recipe that adds cilantro to the traditional ingredients of the pesto sauce (olive oil, basil, garlic and pine nuts).

  1. Preheat oven to 200 degrees.
  2. Combine the cilantro, basil, chopped garlic and pine nuts in a blender to grind the nuts. Add most of the Parmesan, red pepper and stir. Without turning off the brand, pour in the oil little by little so that the sauce becomes a smooth paste. Stir in remaining cheese, taste and season with salt and pepper.
  3. Mix the diced potatoes with 1 tbsp. l. olive oil, season with salt, pepper and roast in the oven until golden brown (about 20 minutes).
  4. Peel the squid fillet and make transverse and longitudinal cuts on it. Toss in the remaining olive oil and paprika. Add to potatoes 10 minutes before cooking ends. Toss the squid with the potatoes and serve with the cooked pesto. Bon Appetit!
