  1. Cover a large baking sheet with paper towels. Peel and cut the potatoes into 1x1 cm cubes.
  2. Place the potatoes in a large bowl of ice water.
  3. Fill a large skillet or deep fryer with oil and heat it to 160 degrees.
  4. While the oil is warming up, remove the potatoes from the water, transfer them to a clean waffle towel, blot well to collect as much water as possible from the potatoes.
  5. Put a small portion of potatoes in a special metal basket, immerse in hot oil for 4-8 minutes, until slightly noticeable golden brown. Place the potatoes on a baking sheet lined with paper towels. Cook all the potatoes in this way and put on a baking sheet, let cool.
  6. Heat the oil in a deep fat fryer to 180 degrees. Place a small portion of lightly fried potatoes in the basket again and dip in hot oil, fry for 4 minutes, until beautiful golden brown and crispy. Transfer the potatoes to a dry paper towel. Fry all remaining potatoes in this way. Sprinkle salt on the finished fries.
  7. Serve hot fries with mayonnaise and pickles (optional).
