Vegetable salad with beans

This veggie and bean salad is both an appetizer and a side dish.

Ingredients

  1. Soak the beans overnight. Rinse, cover with cold water and cook until tender, about 1-1.5 hours.
  2. Boil beets, potatoes and carrots. Because the beets take longer to cook, then after 20 minutes remove the potatoes and carrots with a slotted spoon, and cook the beets for another 15-20 minutes. Cool, clean.
  3. Dice the beets, potatoes, carrots, cucumbers and onions.
  4. Add beans to vegetables, season salad with beans with sunflower oil, salt and mix.
  5. Let the bean salad steep for 30-60 minutes.
