Soup of the peasants of Eastern France. Very tasty, very rich, because it languished in the oven for 2 hours.

  1. We clean the vegetables. Cut potatoes, carrots and onions into small slices.
  2. Chop the cabbage finely.
  3. Put a piece of smoked pork belly, potatoes, carrots, onions and beans in a pot or saucepan with thick walls, pour water so that it covers the vegetables by 5-7 cm, put it in the oven turned on at 180 degrees and bring to a boil. Then reduce the temperature to 140-150 degrees, cover and cook the vegetable soup for 2 hours.
  4. Add green peas and cabbage, salt to taste and cook for another 25-30 minutes. At the end, sprinkle the vegetable soup with chopped herbs.
  5. Serve the vegetable soup in deep bowls, after cutting the pork belly into pieces. Vegetables should be soft, but not overcooked. The pork belly should have a pleasant pink color. Everything seems to be so - the soup was a success.
