Vegetable stew with lentils and barley

Make this lean stew with a wide variety of ingredients: potatoes, onions, carrots, green beans, pearl barley, and green lentils. These products are harmoniously combined with each other - the result is a balanced dish that perfectly saturates. The dish is suitable for vegetarian supporters, fasting people and lovers of a mix of cereals and vegetables.

  1. If the green beans are too long, it is advisable to cut them into shorter pieces.
  2. Pour lentils and pearl barley with clean water and leave overnight.
  3. Then rinse the pearl barley and lentils thoroughly, drain the water. Set the cereals and beans aside.
  4. Peel the onion, wash and cut into small cubes.
  5. Wash, peel and cut the carrots into medium-sized cubes.
  6. Peel and chop the garlic.
  7. Heat vegetable oil in a heavy-bottomed saucepan / cauldron and add chopped onion and garlic to it. Stirring, fry over medium heat for 1-2 minutes, until the onion is soft and translucent.
  8. Add chopped carrots and sauté everything together over low heat for 7 minutes.
  9. Add clean, soaked pearl barley to the saucepan. Stir and cook over medium heat for 3-4 minutes.
  10. Remove the skins from the tomatoes in their own juice, if any. Cut the peeled tomato pulp into small pieces.
  11. Add the chopped tomatoes to the saucepan.
  12. Simmer everything together for another 10 minutes over medium heat.
  13. Then add the clean soaked lentils to a saucepan and continue simmering.
  14. Peel the potatoes, wash and cut into small pieces. Add the chopped potatoes to the pot with the rest of the ingredients.
  15. Add salt, black pepper, bay leaf and water (450 ml).
  16. Cover the pot with a lid and bring the contents of the pot to a boil. Cook the stew over low heat for about 20-25 minutes, until the potatoes, lentils and pearl barley are cooked through.
  17. At the end of cooking, add chunks of green beans. Bring the vegetable stew with barley and lentils to a boil again and cook over low heat for 5-7 minutes. Remove from heat.
  18. Vegetable stew with lentils and barley is ready.
  19. When serving, top each serving with chopped dill and parsley.
