Incredibly tender and fragrant yogurt cake with bananas and kiwi will delight everyone at a cozy homemade tea party or a festive table. Preparing a dessert is very simple and from the available products, the process will not take much time.   1. Prepare all the items on the list. Buy any delicious shortbread. Buy good quality butter with a high fat content. Gelatin is suitable for instant. Yogurt is best to buy thicker, with a neutral flavor, such as Greek.
  2. Grind shortbread cookies into small crumbs. This can be done with a blender or any chopper.
  3. Melt butter. Cool slightly and pour into cookie crumbs.
  4. Stir until smooth.
  5. For molding, take a split mold or a molding ring with a diameter of 18-20 cm. Cover the sides and bottom with parchment paper. You can use acetate film, as in this case. Spread out cookie crumbs. Tamp well. Send to the refrigerator for 30 minutes.
  6. Peel the kiwi. Cut the kiwi into small cubes.
  7. Put kiwi cubes, sugar and lemon juice in a saucepan.
  8. Send the saucepan over moderate heat. Stirring, heat until the sugar is completely dissolved. Bring to a boil and remove from heat. Cool to room temperature.
  9. Pour instant gelatin with boiled water (100 ml) at room temperature. Leave to swell for 10-15 minutes.
  10. In a separate bowl, combine yogurt and kiwi with sugar. Stir.
  11. Heat the gelatin in the microwave in small pulses for 8-10 seconds. Stir well after each heating until the gelatin is completely dissolved. Pour the gelatin into the kiwi yogurt and mix well.
  12. Peel bananas. Slice bananas into slices 7-10 mm thick. Lay the banana slices on top of the cookie layer.
  13. Pour a layer of bananas with the yogurt mixture. Place in the refrigerator for about 6 hours until completely set.
  14. Carefully remove the yogurt cake from the mold. Garnish with kiwi slices and sprinkle with almond flakes.
