Young potatoes cooked in Spanish style

A very simple recipe for cooking young potatoes in Spanish, with spicy pasta and bell peppers.

  1. Peel young potatoes (scrape off the film) and put in cold, slightly salted water. Put on high heat and bring to a boil. Cook for about 10 minutes, until tender. Throw the potatoes in a colander, let the water drain. If the potatoes are large, then cut into halves.
  2. Heat olive oil in a large skillet over medium-high heat, add potatoes and fry, stirring occasionally, until golden brown.
  3. Meanwhile, knead the garlic, chopped chili and cumin in a mortar. Add paprika and vinegar to this mixture, mix well. Place the spicy pasta in a skillet with potatoes. Also put the bell pepper in the pan, mix well and cook for about 2 minutes. Transfer the potatoes to a dish and sprinkle with coarse salt.
