Stewed young potatoes with zucchini, mushrooms and minced meat are a complete nutritious and healthy dish. Young seasonal vegetables are stewed quickly, the dish is cooked in one pan, it does not take much time to prepare and it turns out to be delicious. Hearty minced meat, soft juicy vegetables and fragrant springy mushrooms - a great dinner after work!

  1. You will also need 80-100 ml of drinking hot water.
  2. Defrost the minced meat if necessary. I used a mixture of ground pork and ground beef, but you can use any to your liking.
  3. You can use purple onions, like me, or ordinary onions - this will not change the taste of the dish very much.
  4. Peel the onions, carrots and garlic, cut off the ends of the zucchini on both sides.
  5. Peel the champignons from the skin and impurities on the legs.
  6. Heat vegetable oil in a skillet or frying pan with high sides, put the minced meat in it and fry, breaking the lumps with a spatula, for about 3-4 minutes over medium heat.
  7. Cut the onions into small cubes. Chop the garlic finely with a knife. Cut the carrots into semicircles.
  8. Once the minced meat turns gray, add the onion. Fry together for 3-4 minutes, until the onions are soft.
  9. Add carrots to the pan, stir.
  10. Peel the potatoes (in young potatoes, the thin skin is easily scraped off with a knife) and chop coarsely. If the potatoes are small, cook them whole.
  11. Move the minced meat and vegetables aside and place the potatoes in the skillet. Cover and cook for 5 minutes.
  12. Cut the champignons and zucchini into pieces of any size.
  13. Add mushrooms to the pan to the potatoes, mix. Add 80-100 ml of drinking hot water, cover and simmer for 10 minutes on low heat.
  14. Add zucchini to the pan, stir. Add a third of the red hot pepper pod to the skillet as desired.
  15. Season the dish with salt and pepper. Cover and simmer for another 5-7 minutes. Then remove the skillet from the heat.
  16. Finely chop the parsley and sprinkle the finished dish on it. Let the dish sit a little under the lid before serving.
  17. Young potatoes, stewed with zucchini, mushrooms and minced meat, are ready. Divide the stew into portions, after removing the hot peppers from the pan.
