Berber tea is a popular way of brewing tea in the east, and especially in Tunisia.
In addition to traditional sugar and mint, lemon, loose leaf tea and some nuts are added to the tea.

Ingredients

Directions

  1. Measure the tea and the required amount of water into a kettle or other suitable container. Bring the mixture to a boil and simmer for 3-4 minutes.
  2. In the meantime, prepare the rest of the ingredients.
  3. Crush the pine nuts lightly. You can use a pestle, spoon, or even crush the nuts with your fingers. From these manipulations, the nuts will release a healing oil. If the nuts are fresh, there will be a lot of oil and you may even be able to see it as tiny droplets on the surface of the finished drink.
  4. Place pine nuts at the bottom of the cup, add a few mint leaves. The edge of traditional tall glasses can be decorated with a sugar rim. To do this, moisten the edge of a glass with lemon juice and dip in sugar.
  5. Pour ready and slightly chilled tea into prepared glasses.
