Peel the onion and chop thinly. Finely chop the parsley and green onions.
Heat some olive oil in a non-stick skillet and sauté the onions for 8-10 minutes over medium heat until translucent.
Add curry and 1 tablespoon water. Stir and heat for another 3 minutes.
Pour the cooked rice into the pan, stir and fry for 2 minutes.
Cut hot smoked trout into small pieces and send to rice, add parsley, green onions and yogurt. Stir gently so that the fish does not fall apart, and keep on fire for some time.
Remove from heat, season with lemon juice and black pepper to taste, then add chopped eggs.
