Mexican rice with beans

  1. Heat olive oil in a large saucepan over medium heat. Add chopped onion, chopped garlic and pepper. Fry for about 9 minutes, until the onions are translucent. Add rice and stir for 2 minutes. Then pour in the broth, salt and bring to a boil.
  2. Reduce heat and cook the rice for about 15 minutes, until it is tender and absorbs the broth. Remove the saucepan from the stove and let the rice stand with the lid closed for about 5 minutes.
  3. Put the rice in a bowl, add half a can of red beans and leave for a while, stirring occasionally. Season with salt and pepper.
