Chinese fried rice with eggs and spices - as it is prepared in China and wherever there is a strong Chinese culinary influence. And in general - this dish has long been global.

  1. Beat eggs and salt with a fork or Chinese chopsticks. Heat 30 ml of vegetable oil in a wok and fry the eggs, stirring them with a spatula. Then transfer to a clean dish.
  2. Take pre-cooked and chilled rice, break all the lumps in it with the help of oiled hands.
  3. Add more oil to the same wok, quickly fry chopped ginger and garlic, add rice and fry it, stirring constantly, for a couple of minutes.
  4. Add the onion, cut into large cubes, continue stirring for another minute or two. Then add the omelet, season with salt and pepper to taste and continue to fry and stir. Do not let the rice burn to the bottom of the wok. Pour soy sauce over the edge of the wok, continue to fry for another 30 seconds, then add chopped green onions, stir well and remove from heat. Garnish with fresh green onions.
