Bulgur is a traditional cereal for the Far East, it came to us recently but quickly gained popularity due to its ease of preparation and versatility. Bulgur is prepared by heat treatment of wheat grains with their subsequent drying and grinding. Due to this method of cooking, bulgur requires very short cooking, and often just enough to infuse it in hot water. It goes well with meat dishes, and cold and warm salads, perfect for a vegetarian menu.

  1. Bring the water to a boil, add the bulgur and, stirring over low heat, wait until the cereal absorbs water.
  2. Cover the pan with a clean kitchen towel and then with a lid. Let stand for 10 minutes.
  3. Stir with a fork to make the cereal crumbly, and add salt.
