Chahan tori (Chicken fried rice)

  1. In one and a half liters of water, boil the rice until al dente, rinse with cold water.
  2. Cut the chicken fillet into cubes and fry in olive oil, set aside.
  3. Cut the pepper and zucchini into small cubes and fry in olive oil until tender.
  4. Pour 4 tablespoons of olive oil into a large skillet or wok, add rice, stirring occasionally, fry for 7 minutes over high heat, add chicken and vegetables, add soy sauce, pepper and fry for another 5 minutes.
  5. Garnish with green onions and sesame seeds, and serve with arugula and cherry tomatoes.
