Cut vegetables and meat into small cubes. Salt and pepper the meat and fry. Add onions, carrots. After a couple of minutes add potatoes, pour over coconut milk and simmer over low heat.
While the vegetables and meat are stewing, prepare the curry sauce (see note).
Fry seeds and leaves without oil, cool, grind. Add turmeric. Chop fresh chili, onion, ginger in a blender, combine with tomatoes and powder. Chili powder can be added to make it hot.
Combine the prepared sauce with meat and vegetables, add tomato paste, salt and bring to readiness.
Boil rice separately. Serve the Japanese curry, placing a portion of the rice on one side of the plate and a portion of the curry on the other, without stirring.
