Diet risotto from wild rice with porcini mushrooms

  1. Soak the rice for 2 hours in cold water, then drain the water, rinse, add new cold water in a ratio of 1: 2 approximately, and after it boils, reduce the heat and cook, covering with a lid.
  2. Peel the onion, cut into cubes and toss into a saucepan with rice.
  3. Rinse the mushrooms, peel and cut into wedges and send to the saucepan with rice.
  4. After about 25-30 minutes, the risotto will be ready - this will be indicated by the absence of water in the pan.
  5. Drizzle with lemon juice, soy sauce and fresh parsley before serving.
