Rinse the rice under cold running water. Bring the water to a boil in a large saucepan and add the rice. Cook for 10-12 minutes until tender. Drain and rinse in cold water. Transfer to a container and refrigerate for 2 hours or overnight.
Heat the wok over high heat, add half the oil and distribute over the skillet. Crack eggs and spread over skillet. When they have hardened, roll up and transfer from the pan. Cut into small pieces.
Heat the wok again over high heat, add the remaining oil and distribute over the walls. Add diagonally thinly sliced Chinese sausages and chopped beans and sauté for 2-3 minutes.

Add chopped 6 scallions, garlic and ginger and cook for 1 minute. Add shrimp and cook for another 1-2 minutes. Add rice and peas, stir well and heat. Add soy sauce.
Serve sprinkled with chopped egg and leftover onions.
