Fried rice with vegetables, soy sauce, miso soup and pickles

Cook the rice in boiling water until soft. Drain and rinse under cold water.
Heat a wok over medium heat for 1-2 minutes until hazy and add vegetable oil. Place the sliced mushrooms and cook for 2 minutes, then add the sliced tofu and cook until golden brown for 3 minutes. Then add the corn, peas and green onions and heat the vegetables over medium heat. Add rice, salt and soy sauce. Cook for 2 more minutes.
Pour lightly beaten eggs into a wok and fry until tender. Divide the mixture into 2 bowls. Heat the miso soup and serve separately with the pickles next to it.
