Greek pork with potatoes

  12. Heat vegetable oil in a saucepan, put eggplants and fry them until half cooked. Remove the saucepan from the heat.
  13. Grate pieces of loin well with spices and put in a saucepan.
  14. Add potato wedges, garlic cloves, bay leaf and tomato wedges.
  15. Advice. The dish will turn out much tastier if the potatoes are fried a little beforehand.
  16. Sprinkle everything with spices again, season with salt and pepper.
  17. Pour olive oil (4-6 tablespoons) and water or broth (250 ml) into a saucepan.
  18. Cover the stewpan with foil (as tightly as possible) and place in the oven heated to 180 ° C for 1.5-2 hours.
  19. Remove the finished dish from the oven and let it brew for about 15 minutes.
  20. Sprinkle with chopped herbs when serving.
