Kuurma-choy is a traditional drink of Kyrgyz cuisine. In essence, it is a tea made with the addition of a large amount of milk and cream. The main highlight of this drink is that during its preparation, flour is added to the drink, previously fried in ghee or lamb fat.

  1. Pour boiling water over the teapot. Measure out black leaf tea and pour 100-150 ml of hot water (boiling water, previously slightly cooled for a few seconds).Cover the teapot with a towel and let it brew for 5 minutes. Then pour in the remaining volume of water.Preheat a skillet and add butter.
  2. Once the butter has melted, add the wheat flour.While stirring, fry the flour for a few minutes until golden brown and a pleasant "nutty" aroma appears. During the frying process, rub the large lumps that form.Preheat the container (cauldron / pot). Strain and pour the prepared tea into it.Bring the tea to a boil and then add the cream, milk and butter-fried flour. The amount of flour mixture can be used to adjust the desired thickness of the drink (I added all the flour).
  3. While stirring the drink with a whisk, bring the mixture to a boil and simmer over low heat for 5 minutes.Then turn off the heat. Season with salt and ground black pepper to taste. Pour the drink into bowls or cups and serve.
