Lentil stew with rice, coconut milk and cilantro

Ingredients

  1. Soak lentils for 2 hours.
  2. Fry onions, ginger, garlic and chili peppers until golden brown. Add tomato paste and spices. Fry over low heat for 5 minutes. Place in a saucepan and add washed lentils.
  3. Add water, cover the pan with a lid and simmer over low heat for 1–1.5 hours.
  4. Pour coconut milk into a saucepan and simmer until slightly thick. Finally, add herbs and spices to taste.
  5. Serve stew with boiled rice, garnish with cilantro leaves.
