This dish will take its rightful place on the festive table! Meat "Book" or "Accordion" is prepared quite quickly and simply, and the meat turns out to be incredibly tasty! The main thing is that from the hostess, such pork with mushrooms and cheese will require minimal hassle. The meat can be grated in advance with salt, pepper and mustard with olive oil, and put in the refrigerator to marinate for at least a couple of days. And stuffing the chop with slices of cheese and mushrooms doesn't take much time. The oven will do the rest for you. But the guests will be delighted!

  1. Prepare the ingredients for the "Meat Book" with mushrooms and cheese in the oven (Meat Accordion) "
  2. Peel the garlic and chop finely.
  3. In a bowl, combine: mustard, garlic, pepper and olive oil.
  4. Wash the champignons, shake off excess water and cut into slices.
  5. Cut the cheese into slices.
  6. Wash the pork with cool water and dry well with paper towels.
  7. Make deep transverse cuts, at a distance of 1-1.5 cm, without cutting through the flesh to the end.

  9. Grate the meat well on the outside and inside of the cuts: salt, freshly ground pepper and a mixture of olive oil and mustard.
  10. Stuff the "accordion" with slices of mushrooms and cheese, putting them in the cuts.
  11. In order for the "accordion" to keep its shape well and not fall apart, you can tie the meat with culinary thread or twine.
  12. The accordion can be baked in foil or in a baking bag (or sleeve).
  13. Place the meat in a roasting sleeve (tie the sleeve on both sides using special fasteners or culinary thread). If there is no sleeve, wrap the meat in foil.
  14. Place on a baking sheet or a suitable baking dish.
  15. Bake the "book" in an oven preheated to 180ºC, about 1 hour - 1 hour 20 minutes, until fully cooked.
  16. If desired, at the end of cooking, remove the foil or carefully cut the baking sleeve (so as not to burn yourself with the steam) and brown the "book".
