  1. First you need to prepare the mushroom filling. Champignon mushrooms or any other mushrooms of your choice, clean from dirt and cut into small cubes. Peel the onions and cut into small cubes.
  2. Heat sunflower oil in a frying pan and fry onions in it until golden brown. Add chopped mushrooms to the onion and fry until cooked, season with salt to taste. As the mushrooms are fried until cooked, turning off the stove, I added black pepper to taste, two cloves of garlic, which I squeezed through the garlic, a pinch of dried marjoram and a tablespoon of sour cream, mixing all this, leave aside.
  3. Now you will need to cook the chicken fillet. I had 3 pieces weighing 500 grams. Rinse the breasts under running cold water, dry with paper kitchen napkins. Remove excess films, if any. Cut each breast in half, and then cut each half into 2 - 3 schnitzels (depending on the thickness and size of the breast).
  4. From three briskets, 13 schnitzels came out.
  5. Now put chicken schnitzels 4 pieces under cling film on a board or as much as you can fit and beat off with a hammer until thin chops, but do not overdo it. Season the chicken chops with salt and pepper on both sides. Now grease the muffin pan with vegetable oil.
  6. Preheat the oven to 180 ° C.
  7. Put chicken chops in a muffin mold (you can take any molds - iron or silicone for muffins). Fill each with mushroom filling. Put a cherry tomato on top, pressing it a little into the mushroom mass. And put a sliced mozzarella slice on top.
  8. Place the forms on the wire rack and bake in the oven at 180 ° C for about 20-25 minutes until tender.
  9. Remove the finished muffins from the molds, put on a dish, sprinkle with chopped parsley on top and serve with any side dish of your choice.
