  1. Peel the vegetables. Eggplant, potatoes, and peppers are cut into cubes. Add salt to the eggplant, leave for 15 minutes, then rinse with water. Mix potatoes with grated carrots, and add salt to taste. Fry finely chopped onion with eggplant and bell pepper in vegetable oil. Fry the mushrooms separately.
  2. Lay out the ingredients in cups in layers in the following sequence: the first layer - potatoes with carrots, the second layer - eggplant with pepper. Place fried mushrooms on top. Bake for 40-50 minutes. Serve in cups, garnished with greens.
