I don't particularly like knuckles, but in such a marinade it turns out delicious

  1. Wash the shank, dry it. Peel the garlic and cut into plates. Lash the shank: make a puncture with a knife and insert a piece of garlic. Then rub with salt, pepper and spread with mustard 1/2 b. Put the shank in a container, cover with foil and leave to marinate for a day, or at least overnight, periodically turning. After marinating, coat with the remaining mustard, wrap in foil and bake for about an hour, maybe more. I carefully opened and pierced with a knife, when the knife passes easily, you need to remove the foil and bake a little more until golden brown. Serve with vegetables, garnish of your choice. You get a very aromatic meat with a delicate, golden brown crust!
