  1. Rinse the rice with cold water. Put the rice in a saucepan and cover with cold water. Long grain rice requires 1–1.5 parts of water, and Italian arborio requires 3 parts of water.
  2. Place a saucepan over high heat and bring the rice to a boil, stirring occasionally. After the rice has boiled, reduce heat to low, toss in the butter and cover for 20 minutes. The lid must be without a hole for steam to escape. To prevent steam from escaping into the gap between the lid and the pan, the lid can be wrapped with a clean towel.
  3. After 20 minutes, remove the pan from the heat and place on a damp towel. Open the lid, stir the rice with a fork, close it again and let it rest for 10 minutes.
